Our kefir is born from heritage tibicos grains, a living consortium of naturally occurring microorganisms. The fermentation runs for 24 hours in a double cycle, precisely balancing acidity and natural gases. The result is a drink with a pH of 4.32—an environment that favours beneficial gut microbes while remaining gently tart and easy to drink.
The Microbial Diversity of Kefir
Rokabo kefir contains 36 distinct strains, spanning lactic-acid bacteria and yeast: Lactobacillus, Bifidobacterium, Streptococcus, Saccharomyces, and Kefiranofaciens. Each strain has a specific role—for example, Lactobacillus acidophilus aids protein digestion and may reduce intestinal inflammation, while Bifidobacterium longum is associated with immune support and stress regulation through the gut–brain axis.
This diversity not only improves survival through stomach acid but also encourages the production of antioxidants and short-chain fatty acids (SCFAs) vital to gut health. The resulting CFU concentration is ~12 billion CFU/ml—a fixed value per millilitre, never multiplied by the 280 ml bottle volume.
